Vegetable Ragout

Ingredients

  • 1 onion
  • 1 red bell pepper
  • 2 stalks celery
  • 2 cloves garlic
  • 600 g tomatoes
  • 100 ml Vegetable broth
  • 2 tbsp finely chopped parsley
  • 2 tbsp finely chopped dill
  • 0.5 tsp dried thyme
  • Pepper (freshly ground)
  • 4 tbsp olive oil
  • 300 g green beans

Instructions

    Peel the onion, halve it, and slice into thin rings.

    Wash, trim, halve, seed, remove white membranes from the bell pepper, and cut into thin strips.

    Wash, trim celery stalks and slice into 1 cm thick rounds. Peel garlic cloves and finely chop them. Briefly blanch tomatoes, cool, peel, quarter, seed, and slice into thin strips. Wash, trim green beans and halve them.
