Peruvian Fish Dish

Ingredients

  • 500 g very fresh white fish fillet (e.g., Atlantic halibut, perch, rockfish)
  • 3 limes (1 organic)
  • 0.5 bulb fennel
  • 1 Red Onion
  • 0.5 red bell pepper
  • 0.5 green bell pepper
  • 0.5 Red chili pepper
  • 1 Avocado
  • 0.5 handful mixed herbs (parsley and coriander)
  • 80 ml olive oil
  • Salt
  • Pepper

Instructions

    Wash the fish fillet, pat dry, and cut into ~3 cm cubes. Wash a lime hot, pat dry, and grate about ½ tsp zest. Wash the fennel, trim, and shave thinly.

    Peel the onion and slice finely. Wash the bell peppers, trim, and cut into fine strips. Wash the chili, deseed, and slice into thin rings. Wash the herbs, shake dry, and roughly chop.

    Halve the avocado, remove the pit, and dice the flesh. Combine the fish pieces with the vegetables, herbs, zest, oil, and lime juice. Cover and refrigerate for about 1 hour. Season with salt and pepper before serving. Serve with white bread.
