Colorful Vegetarian Vegetable Stew
A colorful vegetarian vegetable stew from Spoonsparrow: a delicious feast for the eyes, packed with plenty of vitamins and nutrients.
Ingredients
- 1 onion
- 2 tbsp Rapeseed oil
- 4 Carrots
- 400 g small violet potatoes (Vitelotte)
- 1 l vegetable broth
- 2 sprigs bean herb
- 4 small red bell pepper caps
- 400 g Green Beans
- Salt
- Pepper
- ground cumin
- dried Marjoram

Peel the onion and dice finely. Sauté in hot oil in a large pot until translucent, then remove from heat. Peel the carrots and cut into about 1.5 cm thick pieces. Wash the potatoes thoroughly; halve smaller ones and quarter larger ones. Add both to the pot with vegetable broth, the bean herb, and simmer for about 20 minutes.

Meanwhile wash, trim, and slice the bell pepper caps into ~1 cm wide strips. Wash, trim, and cut the green beans into ~4 cm long pieces. Add the beans and peppers to the stew and simmer for another 10 minutes.

Remove the bean herb and season the stew with salt, pepper, cumin, and marjoram. Serve the colorful vegetarian vegetable stew hot.
