Ingredients

  • 200 g fresh kale
  • Salt
  • 400 g waxy potatoes
  • 200 g cooked ham (in pieces)
  • 3 eggs
  • 450 ml whipping cream (at least 30% fat)
  • 150 g crème fraîche
  • 1 tsp medium-hot mustard
  • 125 g freshly grated cheese (e.g., Gouda)
  • Pepper (freshly ground)
  • nutmeg

Instructions

    Preheat the oven to 200°C with upper and lower heat. Clean the kale, separate the leaves, wash them, blanch in boiling salted water for 2 minutes, remove, shock, drain, cut off thick stems, and slice the leaves into strips.

    Peel, wash, and thinly slice or shave the potatoes. Cut the ham into 1 cm cubes. Beat the eggs with the cream, crème fraîche, mustard, and half of the cheese; season with salt, pepper, and nutmeg.

    Layer the potatoes and kale in a buttered baking dish in a brick-like pattern, sprinkle with ham, pour over the egg‑cream mixture, top with remaining cheese, and bake in the preheated oven for 35–40 minutes until golden brown. Remove and serve immediately.
