Vegetable Poultry Curry

A delicious vegetable and poultry curry by Spoonsparrow is always a hit.

Ingredients

  • 1 small cauliflower
  • Salt
  • 500 g chicken breast fillet
  • 2 Zucchini
  • 2 onions
  • 2 tbsp oil
  • 4 tsp curry powder
  • 1 pinch cumin powder (Cumin)
  • black pepper from the grinder
  • 1 glass (400 ml) chicken stock
  • 200 ml heavy cream
  • 2 tbsp light sauce thickener

Instructions

    Clean cauliflower, cut into florets and rinse. Boil in salted water for about 6-8 minutes. Drain and set aside.

    Cut chicken breast into goulash-sized cubes. Rinse, clean, and cut zucchini into pieces. Peel and dice onions.

    Heat oil in a non-stick pot. Brown the meat around, adding onions. Remove from heat. Stir in curry powder and cumin, sauté briefly. Season with salt and pepper. Return to heat. Add chicken stock and zucchini. Cover and cook for about 5 minutes.

    Pour in cream and sprinkle sauce thickener. Stir until it boils. Adjust seasoning with salt and pepper.

    Serve with rice as a side.
