Ingredients

  • 6 stalks fresh rosemary
  • 3 cloves garlic
  • 4 chicken thighs (prepped)
  • Salt
  • Pepper
  • 2 tbsp butter
  • 8 tbsp lemon juice
  • 1 Organic lemon
  • 1 bunch spring onions

    Preheat the oven to 200°C.

    Wash and dry the rosemary, then shake off excess moisture. Wash the garlic cloves and cut them into sticks; insert them under the skin of each chicken thigh. Season with salt and pepper. Melt the butter and mix with lemon juice; brush this mixture over the thighs and place them in a baking dish. Tear the rosemary sprigs into pieces and tuck them into the thighs. Slice the lemon thinly and add it to the dish. Trim the spring onions and cut them lengthwise in half.

    Bake in the oven for about 60 minutes, then arrange on plates and serve the chicken in butter sauce with garlic and rosemary.
