Ingredients
- 4 chicken thighs
- 4 tbsp olive oil
- 6 tomatoes
- 4 Garlic cloves
- 40 g Black olives
- 2 rosemary sprigs
- Salt
- Pepper (freshly ground)

Wash the chicken thighs, pat dry, brush with olive oil and season with salt and pepper. Place in a roasting pan and bake at 200°C for 30 minutes. Flip after 15 minutes and pour a cup of salted water over them, spooning water over the thighs occasionally.

Meanwhile, briefly blanch the tomatoes, cool, peel, quarter and seed them. Peel and chop the garlic. Wash rosemary, shake dry and split as desired.

Add tomatoes, garlic, olives and rosemary to the chicken after 30 minutes and bake at 180°C for another 10 minutes until cooked through.
