Poached Chicken Breast

Ingredients
- 750 g tomatoes
- 500 g skinless chicken breast fillet
- 1 glass (400 ml) chicken stock
- 2 onions
- 1 Garlic clove
- 2 tbsp olive oil
- 50 g black olives
- Salt
- ground pepper
- a pinch of sugar
- some parsley for garnish
Instructions

Score the tomatoes crosswise, blanch in boiling water for 1 minute, drain, cool and peel. Cut tomatoes into pieces.

Rinse chicken breast fillet cold and pat dry. Bring chicken stock to a boil. Add chicken breast, simmer gently for 6 minutes, then let cook on low heat for another 6-8 minutes until done.

Peel and dice onions and garlic. Heat olive oil. Sauté onions and garlic until translucent. Add tomatoes and sauté briefly. Pour in about 150 ml chicken stock and reduce to a thick sauce. Stir in olives and season with salt, pepper, and sugar.

Slice the cooked chicken breast. Serve with the sauce and sprinkled parsley leaves.
