Vegetable Nori Rolls

Ingredients
- 1 cucumber
- 1 Avocado
- 200 g artichoke hearts (canned)
- 1 handful alfalfa sprouts
- 4 roasted nori sheets
- Wasabi paste (to taste)
- 0.5 lime (juice)
Instructions

Peel the cucumber, cut it lengthwise in half and remove the seeds. Cut each half into sticks about 10 cm long. Peel the avocado, halve it, remove the seed and cut into sticks as well. Drain the artichoke hearts well and slice them into strips. Rinse the sprouts and drain thoroughly.

Place each nori sheet on a bamboo mat wrapped in plastic wrap and spread wasabi over it. Lay the lower third with the vegetables and sprinkle with sprouts. Drizzle lime juice. Brush the edges with water and, using the bamboo mat, roll the sheets tightly around the filling. Serve each roll cut lengthwise.
