- 8 pimento (mild bell peppers)
- 100 ml olive oil
- Sea salt
- 1 Garlic clove
- 400 g goat cream cheese
- 1 tbsp Lemon Juice
- pepper (ground)
- 1 tbsp chives

Wash the pimentos, cut off a lid from each and clean out the insides. In a large hot pan, brown the peppers with their lids for about 10 minutes, spooning over oil occasionally. Remove from the fat and drain on paper towels. Season with sea salt.

To fill, peel and crush the garlic clove in a bowl. Stir in the cream cheese, lemon juice, salt, and pepper to taste. Spoon the mixture into the peppers (using a squeeze bottle if needed), replace the lids, and sprinkle with chives before serving.
