Vegetable Noodles with Shrimp

Ingredients
- 40 g dried tomatoes
- 40 g green olives (pitted)
- 1 tsp organic lemon zest
- 1 tbsp Lemon Juice
- 1 tbsp chives
- 5 tbsp olive oil
- 200 g Kohlrabi
- 200 g carrots
- 200 g radish
- 200 g cucumber salad
- 100 ml dry white wine
- Salt
- Pepper (freshly ground)
- 8 large shrimp (pre‑cooked, deveined and peeled except for the tail segment)

Finely chop the tomatoes and olives. Mix both with lemon zest, lemon juice, chives and 2 tbsp olive oil.

Peel, clean and cut the vegetables into long spaghetti strands using a spiralizer. Sauté together in 2 tbsp hot oil briefly, deglaze with wine, season with salt and pepper, and steam gently for about 5 minutes.

Rinse the shrimp, pat dry and cook in a hot pan with the remaining oil for 2–3 minutes until golden brown. Season with salt and pepper. Spoon 1–2 tbsp of the tomato‑olive salsa over the shrimp and arrange on plates. Taste the vegetable noodles and roll them with a fork into glasses. Pour the remaining salsa over and serve with the shrimp.
