Ingredients
- 2 l chicken broth
- 1 leek stalk
- 1 small piece ginger
- 2 tbsp rice wine
- 30 g dried shiitake mushrooms (shiitake mushrooms)
- 1 small pak choi
- 100 g glass noodles
- Salt
- fresh pepper

Add the chicken broth to a large pot and warm it up. Clean the leek and ginger, peel the ginger, and slice both into thin slices. Soak the mushrooms in lukewarm water for about 10 minutes. Add the leek, ginger, and rice wine to the broth. Simmer on low heat for about 35–40 minutes.

After 10 minutes, add the drained mushrooms. Wash the pak choi, shake it dry, and split the leaves. Rinse the glass noodles under cold water.

Season the broth with salt and pepper and reheat briefly. Add the glass noodles and pak choi leaves and cook for 5 more minutes. Serve the soup in bowls and garnish with shiitake slices.
