- 400 g mostly firm potatoes
- 2 parsnips (ca. 400 g)
- 2 thick carrots
- 75 ml vegetable broth
- 4 tbsp thyme honey
- 5 tbsp olive oil
- Salt
- pepper (ground)
- 4 sprigs thyme

Preheat the oven to 200°C fan-forced.

Peel the potatoes, parsnips and carrots and slice them very thinly or into rounds. Layer alternately in a fireproof dish. Pour over the vegetable broth, drizzle with honey and oil, and season with salt and pepper. Top with thyme sprigs and bake for about 1 hour. Occasionally spoon some of the cooking liquid over the vegetables and add more broth if needed.
