Ingredients
- 500 g butternut squash
- 1 EL brown sugar
- 5 EL orange juice
- 2 EL Apple cider vinegar
- 50 ml Vegetable broth
- 2 EL raisins
- 1 TL green peppercorns
- 0.5 nettle leaves
- grobes Meersalz coarse sea salt
- 1 EL olive oil
Instructions

Peel the pumpkin and slice the flesh into rounds. In a pan caramelize the sugar, add the pumpkin, then deglaze with orange juice, vinegar, and broth.

Add raisins and peppercorns and simmer for about 10 minutes. Wash the nettle leaves, set aside some for garnish, cut the rest into strips.

Finally fold the nettle strips into the pumpkin, season with salt, and serve in bowls. Drizzle with good olive oil and accompany with fresh baguette.
