Baked Artichoke

Ingredients

  • 4 artichokes
  • Salt
  • a splash of lemon juice
  • 80 g freshly grated Parmesan
  • 6 tbsp breadcrumbs
  • 6 tbsp heavy cream (at least 30% fat)
  • 1 clove garlic
  • pepper (ground)
  • butter (for the pan)
  • 40 g butter (crumbled)
  • 300 g chopped tomatoes (canned)
  • 1 tsp freshly chopped oregano
  • 2 tbsp Marsala wine
  • oregano (for garnish)

Instructions

    Wash, trim and halve the artichokes, removing the choke. Cook them in boiling salted water with a splash of lemon juice for about 15 minutes.

    Preheat the oven to 200°C (400°F).

    In a bowl mix parmesan with half the breadcrumbs and heavy cream. Peel and press garlic into the mixture, season with salt and pepper, then spoon over the drained artichokes placed in a buttered baking dish. Sprinkle remaining breadcrumbs on top and dot with crumbled butter.

    For the tomato sauce, blend the canned tomatoes with oregano, marsala wine, and crushed red pepper flakes; season with salt and pepper and pour over the artichokes. Bake for about 15 minutes until golden. Serve hot, garnished with fresh oregano.
