Asparagus with Ham and Egg

Ingredients
- 2 kg white asparagus
- Salt
- 120 g butter
- 2 tbsp lemon juice
- 1 tbsp sugar
- 4 eggs
- 8 slices cooking ham
- Nutmeg (freshly grated)
- paprika powder (sweet)
- 2 tbsp freshly chopped parsley

Wash the asparagus, peel thoroughly and cut off woody ends as needed. In a large pot bring plenty of water with 2 tbsp salt, 1 tbsp butter, lemon juice and sugar to a boil and simmer gently for about 20 minutes.

Cook the eggs about 6 minutes until soft-boiled, shock in cold water, peel and halve.

In a small saucepan bring remaining butter to a boil. Skim off foam and pour clarified butter (without sediment) into small cups.

Lift asparagus with a slotted spoon, drain, arrange on plates. Add ham slices and egg halves, grate nutmeg over them, sprinkle paprika powder, salt and parsley, and serve with the butter cups.
