Ingredients

  • 650 g beef goulash (shank)
  • 4 shallots
  • 2 Garlic cloves
  • 400 g small new potatoes
  • 400 g cocktail tomatoes
  • 2 Zucchini
  • 3 tbsp oil
  • 500 ml meat broth
  • 1 tsp cumin
  • 1 tsp paprika powder
  • 2 tbsp Tomato paste
  • 2 tbsp chopped chives
  • 4 tbsp Sour cream

Instructions

    Wash and pat dry the beef, then cut into cubes.

    Peel and cube the shallots.

  3. 3.

    Rinse the potatoes thoroughly.

    Wash, trim, and slice zucchini diagonally into thick rounds.

    Wash tomatoes and halve them.

    Peel garlic and finely chop it.

    Brown the beef in hot oil in a large pot, then add shallots and garlic. Add cumin, tomato paste, and paprika, stir briefly, pour in broth, cover and simmer for about 45 minutes. Add potatoes and simmer another 15 minutes; then add zucchini and tomatoes and cook everything for an additional 10 minutes. Stir in sour cream, season to taste, and serve sprinkled with chives.
