Cucumber Salad with Ham

A cucumber salad with ham delivers half of your daily potassium requirement and is rich in valuable fiber.

Ingredients

  • 1000 g large salad cucumber (2 large cucumbers)
  • 1 onion
  • 2 tbsp olive oil
  • 100 g sliced turkey ham (diced)
  • Salt
  • Pepper
  • a pinch sugar
  • 400 g diced tomatoes (canned)
  • 0.5 bunch dill
  • 100 g cream cheese (13% fat)
  • 2 whole grain rolls

Instructions

    Peel cucumbers and cut them lengthwise in half. Remove seeds with a teaspoon.

    Slice cucumber halves into about 1 cm thick rounds.

    Peel, halve, and slice onion thinly.

  4. 4.

    Heat olive oil in a non-stick pan and sauté cucumbers over high heat for 2-3 minutes while stirring.

    Add onion and ham cubes and cook together for 2 minutes. Season with salt, pepper, and sugar.

    Stir in canned tomatoes, mix well, and simmer cucumber mixture over medium heat for 5 minutes.

    Meanwhile wash dill, shake dry, and roughly chop.

    Fold cream cheese and dill into the cucumber mixture, season with salt and pepper to taste. Serve the salad with rolls.
