Pork and Potato Goulash

Ingredients

  • 2 onions
  • 2 Garlic cloves
  • 600 g pork (shoulder or neck)
  • 2 tbsp clarified butter
  • 1 tbsp Tomato Paste
  • 1 tsp cumin seeds
  • 0.5 tsp dried marjoram
  • Salt
  • pepper (ground)
  • 800 ml meat broth
  • 250 g diced tomatoes (canned)
  • 800 g waxy potatoes
  • 1 tbsp sweet paprika powder
  • Cayenne pepper
  • 2 tbsp chopped chives
  • cream cheese (for serving)

Instructions

    Peel and finely chop the onions and garlic cloves. Wash, pat dry, and cut the pork into cubes. Heat the clarified butter in a large pot and brown the pork on all sides while stirring for 2-3 minutes. Add the onions and garlic and sauté briefly. Stir in the tomato paste and toast it lightly. Add cumin and marjoram, season with salt and pepper, then pour in the meat broth. Add the diced tomatoes and simmer for 1 hour.

    Wash, peel, and cut the potatoes into large cubes. After an hour of cooking, add the potatoes and continue to cook for another 20-25 minutes until tender.

    Season with paprika powder and cayenne pepper, divide among four plates.

    Top each serving with a dollop of cream cheese and garnish with chopped chives before serving.
