Vegan Tomato Sauce

You can easily make a batch of vegan tomato sauce in advance and then enjoy it with whole‑grain pasta whenever you need a quick and healthy meal.
Ingredients
- 2 kg tomatoes
- 4 cloves garlic
- 4 shallots
- 4 tbsp olive oil
- 2 sprigs Rosemary
- 4 sprigs thyme
- 4 sprigs oregano
- Sea salt
- 1 tsp whole‑grain sugar
- Cayenne pepper
Instructions

Wash the tomatoes, cut off the stem ends and briefly blanch them in a pot of boiling salted water. Then cool, peel, and dice. Peel and dice the garlic and shallots.

Heat the oil in a large pan, sauté the shallots and garlic until translucent, add the tomatoes and simmer, stirring occasionally, for about an hour until thickened.

Wash the herbs, shake off excess dirt, pluck the leaves, chop them, and stir into the sauce. Season with salt, whole‑grain sugar, and cayenne pepper. Transfer to prepared jars, seal immediately, and let cool.
