Ingredients

  • 100 g Millet
  • 450 ml vegetable broth
  • 100 g bulgur
  • 2 red tomatoes
  • 1 yellow tomato
  • 1 Mini Cucumber
  • 1 Red Onion
  • 2 bell pepper slices (red and yellow)
  • 1 handful Mint (5 g)
  • 0.5 bunch Parsley (10 g)
  • 6 tbsp lemon juice
  • 6 tbsp Olive oil
  • Salt
  • Pepper

Instructions

    Drain millet and bulgur if needed, place in a bowl, mix with lemon juice, olive oil, salt, and pepper. Add the prepared vegetables and herbs, toss well. Taste the vegan summer salad and serve on plates.
