Ingredients

  • 4 tuna steaks (about 160 g each)
  • 3 garlic cloves (grated with a pinch of salt)
  • 3 tbsp harissa
  • 1 bunch cilantro (chopped)
  • 1 bunch parsley (chopped)
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1 tbsp red wine vinegar
  • 3 tbsp balsamic vinegar
  • 4 tbsp olive oil
  • 80 g Bulgur
  • 1 lemon (juiced)
  • 60 ml olive oil
  • 1 bunch parsley (chopped)
  • 0.5 bunch mint (chopped)
  • 1 bunch scallions
  • 2 Tomatoes
  • Salt
  • ground pepper

Instructions

    Mix all tuna ingredients together and marinate the tuna for 1 hour.

    Soak bulgur in cold water for 30 minutes, then drain and let it dry well.

    Wash, trim, and slice scallions into thin rings.

    Wash, halve, core, and dice tomatoes. Mix lemon juice, oil, scallions, and tomatoes with bulgur. Let sit for another 30 minutes and season with salt and pepper. Finally stir in herbs and serve on plates.

    Quickly sear the tuna on both sides or grill it, then slice in half and arrange over tabbouleh.
