Meatball Tagine

Ingredients
- 1 Red Onion
- 1 Garlic clove
- 2 tbsp fresh chopped coriander leaves
- 600 g ground lamb
- ground cumin
- Salt
- freshly ground pepper
- 800 g tomatoes
- 300 g sweet potatoes
- 2 tbsp olive oil
- 150 ml meat broth
- 1 tsp hot paprika

Peel and finely chop the onion and garlic. Mix both with the coriander into the ground lamb, season with cumin, salt, and pepper, then form small balls.

Rinse the tomatoes, peel, quarter, seed, and dice them. Peel, wash, and grate the sweet potatoes roughly.

Brown the meatballs in a tagine or heavy pot over medium heat with oil until browned all around. Remove them, then add the tomatoes, sweet potatoes, and broth to the pot. Season with salt, pepper, paprika, and cumin, return the meatballs, cover, and simmer gently for about 20 minutes.

Before serving taste the tagine and serve with rice if desired.
