Tomato-Cucumber Salad with Bulgur

Ingredients

  • 100 g bulgur
  • 1 cucumber
  • 500 g tomatoes
  • Salt
  • ground pepper
  • 50 g capers (from jar)
  • 4 tbsp olive oil
  • 250 g Turkish yogurt (or 10% fat yogurt)
  • unmilled cumin
  • mint (for serving)

Instructions

    Place bulgur in a sieve and suspend it over a tall pot of hot water. Steam at medium heat for about 20 minutes until it expands.

    Peel the cucumber, halve it, remove the seeds with a spoon, and cut into thicker slices.

    Wash, dry, trim the stems from the tomatoes and cut them into larger cubes. Place cucumber and tomato pieces in a bowl. Season with salt and pepper. Add capers with 3 tbsp caper liquid and olive oil and mix.

    Remove bulgur from the sieve, let it cool, and fluff with a fork.

    Portion salad ingredients and spread bulgur on top. Whisk yogurt smooth, optionally season with salt, pepper, and a touch of cardamom, then pour over the salad. Sprinkle cumin and garnish with mint leaves.
