Ingredients
- 200 g firm tofu
- 1 tbsp Olive Oil
- 0.5 small onion
- 1 tsp turmeric powder
- 200 g Cherry tomatoes
- 2 tbsp cashew cream or soy cream
- 1 tsp dried herbs (e.g. oregano, thyme)
- 1 pinch salt
- 1 pinch pepper
- 0.5 bunch Parsley
Instructions

Crumble the tofu with a fork or with your hands. Heat oil in a medium-sized pan and fry the tofu for about a minute. Finely chop the onion and add it with the turmeric powder. Wash, halve the tomatoes and fry them as well.

Deglaze everything with 60 ml of water and cashew cream and let it reduce slightly. Season the vegan scrambled eggs with dried herbs, salt and pepper.

Wash, dry shake and roughly chop the parsley. Sprinkle the vegan scrambled eggs with it and enjoy.
