Vegan Red Cabbage Soup Bites

Ingredients
- 350 g red cabbage
- 1 tbsp Rapeseed Oil
- 120 ml vegetable broth (vegan)
- 1 star anise
- 1 stick cinnamon
- 2 cloves garlic? actually Gewürznelken are cloves
- 4 peppercorns
- Salt
- 1 tbsp apple jam
- Lemon juice
- 6 slices whole grain bread
- 2 tbsp Vegan margarine
- 1 handful young spinach
- 2 figs

Wash, trim and slice the red cabbage into strips. Briefly sauté in a hot pot with oil. Deglaze with broth, add star anise, cinnamon, cloves, peppercorns in a spice sachet, season with salt, cover and simmer gently for about 15 minutes until tender. Let cool uncovered, remove the spice sachet, then season with apple jam, lemon juice, and salt.

Cut approximately 12 circles from each bread slice and arrange on a plate. Spread margarine over them. Rinse spinach, pat dry, and shake off excess water. Rinse figs and cut into thin slivers. Arrange spinach atop the cabbage salad (without liquid) on the bread rounds, garnish with fig slices, and serve.
