Energy Balls with Dates, Almonds and Cocoa Nibs

Ingredients
- 150 g dried fruit (75 g dates and 75 g apricots)
- 100 g almond kernels
- 0.5 Vanilla pod
- 25 g freeze‑dried strawberries
- 1 pinch salt
- 30 g cocoa powder (strongly defatted)
- 1 tbsp cocoa nibs (15 g)
- 1 tbsp liquid coconut oil

Pit the dates if needed and roughly chop with apricots. Roughly chop almonds. Split the vanilla pod lengthwise and scrape out the seeds with a knife. Chop strawberries.

Pulse the dried fruit in a blender briefly, then add almonds and mix. Gradually add 1 pinch salt, vanilla seeds, cocoa powder, cocoa nibs, 20 g freeze‑dried strawberries and coconut oil, blending until smooth; if too firm, incorporate 1–2 tbsp water.

Divide the mixture into 16 portions and shape each into 2.5–3 cm balls. Sprinkle the energy balls with remaining strawberry shards, place them in chocolate molds, and chill for about an hour before serving.
