Ingredients

  • 180 g flour
  • Salt
  • 2 tbsp olive oil
  • 100 ml dry white wine
  • flour (for the work surface)
  • 2 shallots
  • 2 tbsp olive oil
  • 120 g grated cheese
  • 1 egg
  • 1 Garlic clove
  • 1 tbsp chopped parsley
  • Salt
  • ground pepper
  • 1 chili pepper (finely chopped)
  • 2 tbsp liquid butter
  • butter (for the baking sheet)
  • 1 egg yolk

Instructions

    For the dough, put flour in a bowl. Add a pinch of salt, olive oil and wine. Knead into a smooth dough. Wrap the dough in cling film, chill in the refrigerator for 1 hour.

    For the filling, peel and finely chop shallots and garlic, sauté in hot olive oil, let cool slightly. Add cheese, chili and egg, mix well. Add onion and parsley, season with salt and paprika powder.

    Roll out the dough on a floured surface thinly and cut circles about 7-8 cm in diameter. Brush dough circles with liquid butter. Place a spoonful of filling on each circle, fold over and press edges firmly. Brush with beaten egg yolk. Arrange on a greased baking sheet and bake in a preheated oven at 200°C for about 10-12 minutes until golden brown. Remove and serve warm or cold.
