Vegan Nut-vegetable Loaf

Ingredients
- 200 g mixed nuts (e.g., hazelnuts, walnuts, pistachios)
- 100 g mixed seeds (e.g., sunflower seeds, pumpkin seeds, sesame)
- Plant oil (for greasing the loaf pan)
- 3 Carrots
- 1 onion
- 2 Garlic cloves
- 1 handful herbs (e.g., parsley, thyme, rosemary)
- 250 g soy quark
- 2 tbsp nut oil
- 50 g chickpea flour
Instructions

Roast the nuts in a hot skillet until fragrant all around. Remove from the skillet and let cool, then pulse in a food processor in portions to avoid over‑milling; repeat with the seeds.

Preheat the oven to 160 °C (320 °F) with both fan and top heating. Line a loaf pan with parchment paper and brush it lightly with oil.

Peel and grate the carrots finely. Peel and dice the onion and garlic. Rinse the herbs, shake dry, pluck off stems, and chop finely.

Combine all prepared ingredients in a bowl with the soy quark, nut oil, and chickpea flour; mix well. Transfer the mixture into the loaf pan and bake for 60–70 minutes. If the loaf darkens too quickly, cover it with foil early on.

Remove from the oven, let rest for a few minutes, then lift out of the pan and slice to serve.
