Red Cabbage Rolls

Ingredients
- 800 g tofu
- 4 oranges
- 250 g knollensellerie (celery root)
- 8 large red cabbage leaves
- Salt
- chili powder
- 2 sprigs Mint
- vegetable oil (for the pan)

Cut the tofu into 8 strips and place them in a shallow bowl. Squeeze the juice of one orange, pour it over the tofu strips, and let sit for about 15 minutes.

Meanwhile peel and finely grate the celery root. Blanch the cabbage leaves in salted water for 2-3 minutes. Shock in cold water, pat dry, and cut off the thick edges. Thoroughly peel the remaining oranges and remove the fillets. Squeeze juice from the leftover fruit flesh.

Lay out the cabbage leaves and top each with a tofu strip, some orange fillets, and celery. Season with salt and chili. Rinse the mint, shake dry, and pluck the leaves. Sprinkle over the filling, fold in the sides, and roll into rolls. Secure with toothpicks or roll pins and place in an oiled baking dish. Pour the orange juice over them and bake at 180°C for about 25 minutes.

Before serving remove the sticks again and serve with onion chutney if desired.
