Vegan Gingerbread

Ingredients

  • 1 Organic Orange
  • 200 g Ground hazelnuts
  • 200 g ground almonds
  • 2 Tbsp apple sauce
  • 1 tbsp Maple Syrup
  • 2 tsp gingerbread spice mix
  • 1 tsp cinnamon
  • 50 g liquid dark chocolate for decoration (approx.)

Instructions

    Preheat the oven to 175 °C (fan‑forced 160 °C; gas: level 2–3). Wash the orange while hot, pat dry and finely grate the zest. Squeeze out the juice.

    Add the remaining ingredients with the orange juice and zest into a bowl and knead vigorously by hand until the dough is well moistened and sticky.

    Divide the dough into 12 equal pieces, shape them into balls and place on a baking sheet lined with parchment paper. Gently flatten each ball with the palm of your hand.

    Bake the vegan gingerbread in the preheated oven for about 12 minutes. Remove and allow to cool completely.

    Coat the vegan gingerbread with liquid chocolate as desired after cooling.
