The peanut butter jam cookies from Spoonsparrow bring many vital nutrients and less sugar to the dessert plate compared to the original.

Ingredients

  • 140 g peanut butter
  • 2 Eggs
  • 60 g whole grain sugar
  • 1 tsp vanilla powder
  • 270 g spelt flour type 1050
  • 0.25 tsp baking powder
  • 60 g raspberry jam (4 tbsp; seedless; 75% fruit content)

    Process 100 g peanut butter in a bowl with eggs, sugar and vanilla powder into a smooth mixture. Sift the flour, mix with baking powder and knead everything into a workable dough.

    Shape the dough into about 30 small balls using damp hands, place on a parchment-lined baking sheet, flatten slightly, press a shallow indentation with the handle of a wooden spoon and fill each with some remaining peanut butter and jam.
