Blueberry Cookies

Ingredients

  • 90 g spelt whole‑grain flour
  • 50 g ghee or butter
  • 25 g coconut palm sugar
  • 1 tsp cinnamon
  • 1 tbsp Naturally Good Rise & Shine spice blend
  • 100 g Blueberries (fresh or frozen)

Instructions

    Preheat oven to 180 °C. Knead all ingredients except the blueberries into a dough, then fold in the blueberries.

    Roll out the dough and shape into cookies by hand. Place cookies on a parchment‑lined baking sheet and bake for about 10 minutes.

    Remove blueberry cookies from the oven and let cool on the sheet for roughly 10 minutes. Transfer to a cookie tin and allow to cool completely before storing.
