Vegan Florentines by Spoonsparrow: The crispy cookies make veggie fans’ hearts flutter. Perfect for Christmas!

Ingredients

  • 100 g candied fruit (orange or lemon)
  • 2 tbsp raisins
  • 50 g raw cane sugar
  • 0.25 tsp vanilla powder
  • 90 g margarine
  • 180 g maple syrup
  • 70 ml oat cream (or another plant-based cream)
  • 2 tbsp flour
  • 340 g chopped almonds
  • 60 g almond slivers
  • 150 g vegan dark chocolate
  • 1 tsp vegetable oil

    Chop the candied fruit and raisins. In a small saucepan, combine sugar with vanilla powder, margarine, maple syrup, and oat cream; stir until it boils and lightly caramelizes. Add the candied fruit, raisins, and flour, mixing well. Fold in the almonds, remove from heat, and let cool slightly.

    Using two spoons, form dough into small mounds on a parchment-lined baking sheet. Flatten them gently. Bake in a preheated oven at 180 °C (160 °C fan) for about 12–15 minutes until golden brown. Let cool completely on a wire rack.
