Classic Florentiner
Classic Florentiner from Spoonsparrow: The traditional Christmas cookie is decorated with dark and white couverture chocolate. Great for gifting!
Ingredients
- 150 g candied fruit (e.g., orange peel, lemon peel, cherry filling)
- 100 g sugar
- 2 tbsp vanilla sugar
- 30 g Butter
- 2 tbsp honey
- 125 g whipping cream
- 50 g currants
- 60 g chopped almonds
- 60 g almond slivers
- 80 g dark couverture chocolate
- 80 g white couverture chocolate

Chop the candied fruit into small pieces. In a small saucepan, combine sugar, vanilla sugar, butter, honey and whipping cream; bring to a boil while stirring. Everything should dissolve well and lightly caramelize. Then fold in the candied fruit, currants and almonds. Remove from heat and let cool slightly.

Line a baking sheet with parchment paper. Using 2 teaspoons, form small mounds on the sheet and press them slightly flatter. Bake in a preheated oven at 180 °C (160 °C fan, gas: level 2–3) for 10–12 minutes until golden brown. Remove the classic Florentiner and let cool.

Chop the dark and white couverture chocolate separately and melt each over a double boiler. Brush or spoon half of the Florentiner with one type of chocolate on its smooth underside. Place the Florentiner, front side down, on parchment paper and allow to dry.
