Florentine without Chocolate
A festive treat that tastes wonderful even without chocolate. Spoonsparrow has the recipe for it!
Ingredients
- 3 egg whites
- 275 g sugar
- 125 g ground almonds
- 200 g butter
- 100 g honey
- 200 g almond slivers
- 60 g lemon zest
- 60 g orange zest
- 60 g cherry filling

Beat the egg whites with 125 g of sugar until stiff, then fold in the ground almonds. Spread the mixture onto a baking sheet lined with parchment paper and bake preheated oven at 180 °C (fan 160 °C, gas: level 2–3) for 10 minutes. Remove and let cool.

Meanwhile cut the lemon zest, orange zest, and cherry filling into fine cubes.

Whisk cream with remaining sugar, butter in small pieces, and honey until it boils, then reduce to a thick consistency off the heat. Mix in almond slivers, lemon zest, orange zest, and cherry filling.

Spread this mixture over the base dough and bake in the oven at 200 °C (fan 180 °C, gas: level 3) for 5–7 minutes until done. Remove, cool, and cut into 4 cm squares. Florentines without chocolate stay fresh in a closed tin for several weeks.
