Vegan Flapjacks

Spoonsparrow vegan flapjacks are the perfect healthy snack before exercise.

Ingredients

  • 150 g coconut oil
  • 100 g maple syrup
  • 1 pinch salt
  • 1 large banana (200 g)
  • 100 g raisins
  • 350 g rolled oats
  • 75 g chopped almonds
  • 75 g pumpkin seeds
  • 0.5 tsp vanilla powder

Instructions

    Heat coconut oil, maple syrup and a pinch of salt in a saucepan over medium heat, stirring occasionally until melted. Peel the banana and mash it finely. Mix raisins, oats, almonds, pumpkin seeds and vanilla powder together, then add the mashed banana to the coconut mixture and stir well.

    Line the bottom of a baking pan with parchment paper. Pour the oat mixture into the pan, spread evenly and press firmly down. Bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for about 20 minutes.

    Remove from the oven and cut into bars while still warm, then allow the vegan flapjacks to cool completely.
