Vegan Crêpes

Ingredients

  • 1 tsp chia seeds
  • 250 g whole wheat flour (e.g., spelt whole wheat flour)
  • 2 tsp Baking powder
  • 300 ml plant-based milk
  • 160 ml sparkling water
  • 40 ml rapeseed oil
  • 2 tbsp rapeseed oil (for frying)

Instructions

    Grind the chia seeds finely, mix with 3 tbsp warm water and let them swell.

    Sift the flour and baking powder into a bowl. In a separate cup whisk the plant milk, sparkling water, chia mixture and rapeseed oil.

    Pour the wet ingredients into the dry ones, stir until smooth, then let the batter rest for 5–10 minutes. If it seems too thick, add a little more liquid.

    Heat a non‑stick pan with a light coating of oil and pour a ladleful of batter into the pan. Cook each crêpe on both sides until golden brown.
