Ingredients

  • 2 Eggs
  • 1 pinch salt
  • 120 g flour
  • 2 tbsp liquid butter
  • 200 ml milk
  • butter (for frying)
  • 1 large pear
  • 0.5 small radicchio
  • 50 g walnut kernels
  • 2 tbsp butter
  • 1 tbsp liquid honey
  • 1 tbsp Lemon Juice
  • 150 g Gorgonzola cheese
  • pepper (from grinder)

Instructions

    Whisk the eggs, salt, flour, butter and milk into a smooth batter and let it rest covered for about 10 minutes.

    Meanwhile wash the pear, halve it, remove the core and cut the halves into wedges. Wash and trim the radicchio leaves into smaller pieces. Chop the walnuts. In a hot pan with butter lightly brown everything together. Drizzle with honey and lemon juice. Remove from heat and let rest.

    From the batter, fry 4 crêpes in another hot pan, each side in a little butter.

    Place the crêpes on plates, top each with some pear mixture and crumble the cheese over them. Serve sprinkled with pepper.
