Vegan Couscous Salad

Spoonsparrow vegan couscous salad: quick, simple, and always delicious, especially as a side for grilled dishes.
Ingredients
- 200 g Couscous
- 1 small cucumber
- 2 Tomatoes
- 0.5 bunch mint
- 0.5 bunch Parsley
- 6 tbsp Olive oil
- 2 lemons (freshly squeezed juice)
- salt (pepper)
- Cumin
- 1 Garlic clove
Instructions

Place couscous in a bowl, pour 200 ml boiling water over it, cover and let stand for 10 minutes, then fluff with a fork.

Peel the cucumber, cut into thin strips. Peel the tomatoes, remove seeds, finely dice the flesh. Wash mint and parsley, shake dry, pluck leaves and finely chop two thirds of them.

In a large bowl whisk olive oil with lemon juice, salt, pepper, and cumin. Peel garlic and squeeze it in. Then fold in couscous, cucumber, and tomatoes. Sprinkle the remaining herbs over the salad.
