Grilled Couscous Tomatoes
Grilled couscous tomatoes with pine nuts and raisins from Spoonsparrow are a treat for vegans and non-vegans alike!
Ingredients
- Salt
- 2 tbsp olive oil
- 200 g instant couscous
- 50 g Pine nuts
- 0.5 bunch Parsley
- 1 bunch spring onions
- 30 g Raisins
- 1 tsp hot paprika powder
- 1 tsp cinnamon
- Pepper
- 1200 g Tomatoes (6 tomatoes)
Instructions

Bring 250 ml salted water with the oil to a boil. Remove from heat and pour couscous into it.

Stir briefly, cover, and let stand for 5 minutes to absorb liquid.

Transfer to a bowl and fluff with a fork.

Toast pine nuts in a dry pan until fragrant.

Wash parsley, shake off excess water, chop leaves. Trim spring onions, wash, and slice thinly.

Mix couscous with pine nuts, parsley, spring onions, raisins, paprika, and cinnamon. Season with salt and pepper.

Wash tomatoes. Cut off one side of each tomato and scrape out the seeds with a spoon.

Season the inside of each tomato with salt and pepper, fill with the couscous mixture, then replace the caps.

Place tomatoes on a lightly oiled grill pan over medium heat and grill for 10 minutes, covering them with a metal bowl or grilling under a closed dome if available.
