Couscous Salad with Zucchini and Bell Peppers

Ingredients

  • 175 g couscous
  • 1 orange bell pepper
  • 1 green bell pepper
  • 1 small zucchini
  • 2 stalks Parsley
  • 1 bunch scallions
  • 6 tbsp Olive oil
  • 40 ml lemon juice
  • Salt
  • Pepper
  • sugar
  • Cumin
  • 1 Garlic clove

Instructions

    Place couscous in a bowl, pour 175 ml boiling water over it, cover and let stand for 10 minutes, then fluff with a fork.

    Wash the bell peppers, dry them, halve, seed, and dice into small cubes. Wash the zucchini, slice lengthwise into thin strips, then cut into fine cubes. Rinse the parsley and drain, then roughly chop. Trim the scallions, finely chop the white parts and slice the green parts into thin rings.

    In a large bowl whisk together olive oil, lemon juice, salt, pepper, a pinch of sugar, and cumin; peel and press the garlic into the mixture. Stir well and taste. Fold in the couscous, bell peppers, zucchini, parsley, and scallions. Cover and let stand for at least 1 hour. Serve by pouring into glasses.
