Couscous Salad with Tomato and Cucumber

Ingredients
- 200 g Couscous
- 350 ml vegetable broth (instant)
- 1 bunch spring onions
- 4 tomatoes
- 1 small cucumber
- juice of one lemon
- 4 tbsp olive oil
- Salt
- Pepper
- 250 g yogurt (3.5% fat)
- 1 bunch parsley
- mint
Instructions

Place couscous in a large bowl. Bring broth to a boil and pour over the couscous. Let it stand for 5 minutes, then cool while occasionally fluffing with a fork.

Clean and rinse spring onions, slicing them into thin rings. Rinse tomatoes and cucumber; peel the cucumber. Dice tomatoes and cucumber into cubes.

Whisk lemon juice and olive oil together. Season with salt and pepper. Mix the dressing, spring onions, tomatoes, and cucumber into the couscous.

Season yogurt with salt and pepper. Rinse herbs, shake dry, and finely chop them. Stir the herbs into the yogurt.

Add a portion of herb‑yogurt to the salad, reserving the rest for serving on the side.
