Various Nigiri (Salmon, Scampi, Salmon Caviar)

Ingredients
- 300 g cooked sushi rice
- 1 tsp wasabi
- 4 slices salmon fillet (about 3 x 6 cm)
- 4 slices tuna fillet (about 3 x 6 cm)
- 4 pre-cooked shrimp (2–3 min boiled)
- 4 tsp salmon caviar
- 4 strips nori seaweed (each about 3 x 10 cm)
- Wasabi paste
- pickled ginger (for serving)
- cucumber slice (for garnish)
Instructions

Divide the sushi rice into 16 portions. Using damp fingers, shape each portion into a 5–6 cm long oval nigiri. Slice the shrimp lengthwise on the belly side without cutting through, slightly open it, spread 1/3 of the wasabi paste over it, and place on four rice rolls. Spread 1/3 of the wasabi paste on the salmon and place on four rice rolls.

Spread 1/3 of the wasabi paste on the tuna and place on four rice rolls. Wrap the remaining rice rolls with a strip of nori so that about a 5 mm high nori edge protrudes above the rice. Press one grain of rice onto each nori strip to seal. Spoon a small amount of caviar into each roll. Serve eight sushi pieces per portion (two of each type) with wasabi, pickled ginger, and cucumber slices.
