Ingredients
- 2 kg mussels
- 150 g chorizo
- 1 Garlic clove
- 1 onion
- 2 tbsp olive oil
- 150 ml dry white wine
- Sea salt
- Pepper (freshly ground)
- parsley (for garnish)
- lemon wedges (for serving)

Wash the mussels thoroughly and remove the beard. Discard any mussels that remain open after washing. Dice the chorizo into cubes. Peel and finely dice the garlic clove and onion. Sauté the garlic, onion, and chorizo cubes in a large pot with hot oil for 1–2 minutes. Deglaze with white wine, season with salt and pepper, then add the mussels to the liquid. Cover and steam for about 6 minutes until the mussels open; discard any that remain closed.

Distribute the mussels and broth onto plates, garnish with parsley leaves, and serve with lemon wedges for squeezing.
