Pickled Olives

Ingredients

  • 1 untreated lemon
  • 2 Garlic cloves
  • Basil
  • 4 tbsp olive oil
  • 200 g green olives (pitted)
  • 200 g black olives (pitted)
  • 100 g sun-dried tomatoes (pickled in chili oil)
  • 0.5 tsp Sea Salt

Instructions

    Drain the tomatoes, halve or quarter them, and mix with the olives.

    Peel the garlic, finely chop it, and grind with sea salt in a mortar together with lemon juice, zest, and olive oil; pour this mixture over the olive blend, fold in basil, and marinate for at least 2 hours.
