Ingredients
- 9 apricots
- 300 g quark
- 1 EL cornstarch
- 3 egg yolks
- 1 vanilla bean (pulp)
- 50 g sugar
- 300 g puff pastry
- powdered sugar (for dusting)

Preheat the oven to 200°C with fan and top heat. Line tartlet tins with parchment paper.

Peel, halve, and pit the apricots after blanching them in hot water. Whisk quark with cornstarch, egg yolks, vanilla pulp, and sugar until creamy.

Roll out puff pastry to about 4 mm thickness and cut into 6 circles (optional ridged) of 12 cm diameter. Place in tins and spread the cream mixture, leaving a thin edge. Top each with three apricot halves and bake for about 30 minutes until golden brown.

Remove from tins, let cool, and dust with powdered sugar before serving.
