Ingredients

  • 200 g cold butter
  • 75 g powdered sugar
  • 1 pinch salt
  • 0.5 untreated lemon (zest)
  • 1 egg
  • 1 vanilla pod (aroma)
  • 220 g flour
  • 80 g ground hazelnuts
  • 2 tbsp vanilla sugar
  • 3 tbsp powdered sugar

Instructions

    Process the butter, powdered sugar, salt, lemon zest, egg and vanilla aroma with the flour and hazelnuts quickly into a smooth dough. Shape into 3 rolls of about 3 cm diameter, wrap in cling film and chill for about 2 hours.

    Preheat the oven to 180°C (356°F) fan‑forced. Cut 1 cm thick slices from the dough and shape them into crescents. Place on a parchment paper‑lined tray and bake in the preheated oven for 10–12 minutes until light brown.

    Mix the vanilla and powdered sugar on a plate. Remove the kipferl from the tray and while still warm roll them in the sugar mixture, then let cool.
