Vanilla Pudding with Fruits

Ingredients
- 350 g lingonberries (washed and rinsed)
- 1 Vanilla bean
- 1 cinnamon stick
- 125 ml raspberry syrup
- 250 ml apple juice
- 2 apples (cored and sliced into thin strips)
- 1 tbsp Cornstarch
- 1 packet vanilla pudding powder
- 500 ml milk

Split the vanilla bean lengthwise, scrape out the seeds and combine with the cinnamon stick in the apple juice and raspberry syrup; bring to a boil. Add the apple slices and lingonberries and simmer gently for about 8 minutes.

Whisk the cornstarch with a little cold water until smooth, stir into the lingonberry compote, bring to a boil, then let cool.

Prepare vanilla pudding according to package instructions, pour into molds, chill, and serve with the cranberry-apple compote.
