Vanilla Pudding

Ingredients

  • 0.5 l milk
  • 1 Vanilla bean
  • 5 egg yolks
  • 100 g sugar
  • 30 g flour
  • 1 pinch salt
  • 2 tbsp chopped nuts

Instructions

    Slice the vanilla bean lengthwise, scrape out the seeds and stir them with the bean into the milk and bring to a boil.

    Beat the egg yolks with the sugar in a bowl until creamy, then fold in the flour.

    Pour the boiling milk into the egg yolk mixture, return everything to the pot, remove the vanilla bean and simmer over low heat while stirring constantly until it thickens.

    Strain the vanilla custard through a sieve, fill dessert cups and let cool, sprinkling a thin layer of sugar on the surface to prevent skin from forming. Sprinkle chopped nuts before serving.
